Ingredients:

  • 500g of boneless, skinless chicken breast
  • 200g of rice noodles
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions:

  • Heat olive oil in a large skillet over medium heat. Add the diced onions and sauté until translucent.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Cut the chicken breast into thin strips and add it to the skillet. Cook until the chicken is browned and cooked through.
  • Add sliced red bell pepper, broccoli florets, and snap peas. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  • Meanwhile, cook rice noodles according to package instructions. Drain and rinse with cold water.
  • Once the vegetables are cooked, add the cooked noodles to the skillet. Pour in the soy sauce and sesame oil, tossing everything together until well combined.
  • Season with salt and pepper to taste. Cook for an additional 2 minutes to heat everything through.
  • Serve hot, garnished with fresh cilantro.
