Chia Pudding with Coconut Milk

Ingredients: 1/4 cup chia seeds 1 cup coconut milk 1 tablespoon honey (optional) 1 teaspoon vanilla extract A pinch of salt Kitchen Tools Needed: Bowl To harvest Serving bowls Instructions: In a bowl, mix together the chia seeds, coconut milk, honey, vanilla extract and salt. Vegan Doner Pizza Pasta Bake

 

Ingredients:

  • 250g of whole wheat penne pasta
  • 200g of vegan minced meat
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 200g of sliced mushrooms
  • 200g of canned diced tomatoes
  • 2 teaspoons of dried oregano
  • 2 teaspoons of smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 100g of vegan cheese
  • Fresh parsley for garnish

Kitchen Tools Needed:

  • Oven
  • Large Pot
  • Baking Dish
  • Knife
  • Cutting Board
  • Stirring Spoon

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Cook the whole wheat penne pasta according to package instructions until al dente, then drain and set aside.
  • In a large pot, heat olive oil and sauté the diced onion and minced garlic until fragrant.
  • Add the red bell pepper and sliced mushrooms, cooking until softened.
  • Stir in the vegan minced meat and cook for about 5 minutes until it’s browned.
  • Add canned diced tomatoes, dried oregano, smoked paprika, salt, and pepper. Simmer for 10 minutes.
  • Combine the cooked pasta with the vegan meat mixture and stir well.
  • Transfer to a baking dish and sprinkle vegan cheese on top.
  • Bake in the oven for about 10 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with fresh parsley before serving.
