Chia Pudding with Coconut Milk

Ingredients: 1/4 cup chia seeds 1 cup coconut milk 1 tablespoon honey (optional) 1 teaspoon vanilla extract A pinch of salt Kitchen Tools Needed: Bowl To harvest Serving bowls Instructions: In a bowl, mix together the chia seeds, coconut milk, honey, vanilla extract and salt. Stir well to ensure the chia seeds are evenly distributed. Let it sit for 5 minutes and stir again to prevent the seeds from clumping together. Banana Chocolate Chip Muffins

Ingredients:

  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips
  • 1/4 cup butter (melted)
  • 1 tsp vanilla extract

Instructions:

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the melted butter and vanilla extract to the mashed bananas and mix well.
  • Gradually add the flour and stir until just combined.
  • Fold in the chocolate chips gently.
  • Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool for a few minutes before removing them from the tin.
