Chia Pudding with Coconut Milk

Ingredients: 1/4 cup chia seeds 1 cup coconut milk 1 tablespoon honey (optional) 1 teaspoon vanilla extract A pinch of salt Kitchen Tools Needed: Bowl To harvest Serving bowls Instructions: In a bowl, mix together the chia seeds, coconut milk, honey, vanilla extract and salt. Stir well to ensure the chia seeds are evenly distributed. Let it sit for 5 minutes and stir again to prevent the seeds from clumping together. Cheesy Spinach Stuffed Chicken Breast

Ingredients:

  • 2 Chicken breasts (200g each)
  • 4 slices of Bacon
  • 1 cup Spinach (fresh)
  • 1/2 cup Cheddar Cheese (shredded)
  • 1/2 cup Provolone Cheese (sliced)
  • 1/4 cup Almond flour

Kitchen Tools Needed:

  • Oven
  • Stove Top

Instructions:

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the bacon until crispy, then chop it into small pieces.
  • In the same skillet, add the spinach and sauté until wilted. Mix in the chopped bacon, cheddar cheese, and almond flour until well combined.
  • Cut a pocket in each chicken breast and stuff it with the spinach and cheese mixture. Place a slice of provolone cheese on top of the stuffing.
  • Season the outside of the chicken breasts with salt and pepper.
  • Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
