Valentine Vatalappan Delight

Ingredients:

  • 300g of thin rice noodles
  • 200g of shrimp, peeled and deveined
  • 150g of tofu, cubed
  • 100g of bean sprouts
  • 50g of green onions, chopped
  • 50g of bell peppers, sliced
  • 2 cloves of garlic, minced
  • 4 eggs
  • 50ml of soy sauce
  • 30ml of sesame oil
  • 1 tablespoon of chili paste
  • Salt and pepper to taste

Instructions:

  • Start by soaking the rice noodles in warm water for about 20 minutes until they become soft. Drain and set aside.
  • In a large mixing bowl, beat the 4 eggs with a pinch of salt. Set aside the egg mixture.
  • Heat a non-stick saucepan over medium heat and add the sesame oil. Sauté the minced garlic until fragrant.
  • Add the shrimp to the saucepan and cook until they turn pink, about 3-5 minutes. Remove from the pan and set aside.
  • In the same pan, add the tofu and cook until golden brown. Remove and set aside.
  • Add the soaked rice noodles to the pan and stir-fry for about 3-4 minutes, then add the cooked shrimp, tofu, bean sprouts, green onions, and bell peppers. Stir everything together.
  • Pour the soy sauce and chili paste over the noodle mixture. Stir to combine and cook for an additional 2-3 minutes until heated through.
  • In a separate baking tray, pour the beaten egg mixture and bake at 180°C for about 10-12 minutes until set, then cut into squares.
  • Serve the noodle mixture in bowls, garnished with the baked egg squares on top, and enjoy your Valentine Vatalappan Delight.
