Chia Pudding with Coconut Milk

Ultimate Chicken and Bacon Tortilla Bake

Ingredients:

  • 1 medium Onion, chopped
  • 1 cup Lettuce, shredded
  • 1 Jalapeno, diced
  • 2 tbsp Horseradish
  • 1 cup Green Peas, cooked
  • 3 cloves Garlic, minced
  • 1 medium Cucumber, sliced
  • 1 cup Corn, canned
  • 1 cup Celery, chopped
  • 200g Ham, diced
  • 300g Chicken breast, cooked and shredded
  • 150g Bacon, cooked and crumbled
  • 1 cup Almond Milk
  • 2 tbsp Rice Vinegar
  • 3 tbsp Hoisin Sauce
  • 4 large Tortillas
  • 2 tbsp Vegetable Oil
  • 200g Pasta, cooked
  • 2 tbsp Mayonnaise
  • 2 large Egg, beaten
  • 1 cup Flour
  • 1 cup Oats
  • 1 can Kidney Beans, drained
  • 1 cup Milk
  • 100g Cream Cheese
  • 150g Mozzarella Cheese, shredded
  • 200g Cottage Cheese
  • 1 cup Blueberries
  • 2 tbsp Chia Seeds
  • 2 tbsp Olive Oil
  • 2 tbsp Honey
  • 2 tbsp Sugar

Kitchen Tools Needed:

  • Oven
  • Stove Top

Instructions:

  • Preheat the oven to 180°C (350°F).
  • In a large skillet, heat the Vegetable Oil over medium heat. Add the chopped Onion, Garlic, and Jalapeno, sauté until softened.
  • Add the diced Ham, shredded Chicken, and crumbled Bacon to the skillet, cooking until heated through.
  • Stir in the cooked Green Peas, Corn, and chopped Celery, mixing well. Remove from heat.
  • In a bowl, combine Almond Milk, Rice Vinegar, Hoisin Sauce, Mayonnaise, beaten Egg, and Cream Cheese. Mix until smooth.
  • In a large baking dish, layer the Tortillas, spreading some of the meat mixture, followed by the sauce, and then a layer of Mozzarella Cheese. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
  • Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  • While the bake is cooking, prepare a salad with Lettuce, Cucumber, Blueberries, and Chia Seeds, drizzled with Olive Oil and Honey.
  • Serve the Tortilla Bake hot, alongside the fresh salad.
